Last weekend, Katie and I had a Minnesota party. The Gophers and the Bulldogs were 1st and 2nd seed in the WCHA hockey Tournament, so we figured we should have a party to watch the final game, assuming one (if not both) of the teams would be in it. To complete the evening, we cooked as much Minnesota food as we could come up with. Katie’s from the Twin Cities and went to UMD and Chris and I went to the U and Matt (Katie’s boyfriend).. he just likes MN because he loves Katie.
We quickly learned that we might have jinxed our teams by planning ahead. UMD got beat by Denver on Friday afternoon and UofM lost to UND on Friday night. That left us with DU vs. UND for a final game for our Minnesota party, not as Minnesota as we were hoping for, huh?
We still had the party, mainly because we were so excited to eat the MN food!
We started off with Pickle Wraps and a Bloody Mary for an appetizer.
Cheese Curds! Extra salt on the side! Also a bit of lefse in the corner too.
FYI.. it’s not possible to buy lefse in Utah – I went to 3 grocery stores looking for it! This lefse made possible by Nancye’s trip to Oslo and a freezer-job. Cheese curds are also difficult to find and require more than 1 day’s worth of shopping.

Stupid hockey game that we didn’t really watch.
It was also St. Patrick’s day on Saturday so we made some homemade Shamrock Shakes because both Katie and I are obsessed with them.
